Oat & Banana Pancakes

My favourite part about these is the sliced banana: no mashing required. Adapted from here.

  • 1/2 C whole wheat flour
  • 1/2 C quick oats
  • 1/4 C chocolate chips
  • 2 tsp baking powder
  • 1 Tbsp sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 C milk
  • 1 egg
  • 1 Tbsp cooking oil
  • 1 banana, sliced

Whisk all ingredients, except the bananas, in a bowl. Add sliced bananas and stir. Use a 1/4 C or 1/3 C measure to scoop batter onto a hot, lightly greased frying pan. Cook until bubbles form in the middle of the pancake, and the edges become matte. Flip over and cook other side for a few minutes (check to make sure it’s not burning!) Makes about 6 pancakes.
