Best Blueberry Bran Muffins

Ok, I have a confession. For the past several months I’ve been eating really well to help keep my self in top shape, mentally and physically. I’ve scoured clean eating & healthy cooking blogs to find new recipes to try out. This is one such recipe. BUT (now here’s the confession), I made this recipe un-clean. I am sorry. It just tastes so much better, and it’s still filled with healthy, wholesome ingredients! Original clean recipe here.

  • 1 1/2 wheat bran
  • 1 C skim milk
  • 1/3 C oil (olive or canola, or another of your choice)
  • 1 egg
  • 1/2 C honey
  • 1 C whole wheat flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 C blueberries (fresh or frozen)

Mix bran and milk together in a small bowl and set aside for 10 minutes. In a large bowl, mix together flour, baking soda, baking powder, and salt. Make a well in the centre. In a medium sized bowl, mix together the oil, egg, and honey. Pour into the dry ingredient well and combine. Stir in the bran mixture. Gently fold in blueberries. Bake at 375F for 20 min.
